Day 38 Almond, orange, honey biscuits and cupcakes

Whilst trying to download the latest Adobe Acrobat 9 and thinking about some lighting designs ... I've done a bit of baking on this autumn overcast day.
Some biscuits
Ingrediants
1 egg
7 tablespoons of butter
5 tablespoons of honey
1 tablespoon of cinnamon
Grated rind of 1 orange
3 cups of almond
home ground meal
2 tablespoons of grated Ginger
Cream butter eggs and honey and mix through other ingrediants.



I made a wetter version with carrot for the cupcakes.



I don't use baking soda anymore.

Day 38 Easter Monday

I spent the first part of the Easter break at mother in law. I overate home cooked SCD meals as I had a feeling I would be overwhelmed by Easter egg offerings.
The Easter bunny didn't put a spell on me this year. I have been generally overworked and stressed out trying to fit in everything before heading to the Light Fair in Germany as well as a business trip to Singapore.
In all that there's been wedding planning, my dear father visiting and my sister finally having the cutest princess ever.
I've packed a picnic bag of bare bone food essentials for my overseas business trips and look forward to checking out German health food cafes and stores.
Easter Sunday was spent with my mother and we had a wonderful fresh food meal from health cafe 'About life' in bondi junction. I can't wait to make an organic apple stew!

Day 29 and 30 weekend

Not a great cooking day on Sunday
Ok baked vegan cupcakes

Banana, apple and raw cashew nut snacks.

Beetroot and cabbage soup
2 small Beetroots, 1/4 red onion, 1/2 small red cabbage
All boiled, cooled including water and run through the blender.
1/4 cup of grated Parmesan and a little parsley
Served with
Carrot and parmesan salad
Stir fried zucchini with mushrooms, a little Spanish onion, broccoli and a little chilli oil.

Day 28

I haven't been too well and generally overworked for the past few days.
I didn't do the food shop for the week and strange items were cropping up in the fridge. I'll be going back to my organic grocer this evening and ready to make new recipes.
The pot of SCD yoghurt has served well in terms of morning
breakfasts with fruit and a sprinkle of almond meal.
The key to SCD is undoubtedly being prepared and taking control of what
you eat.

Breakfast

Mr Marvel threw together a number of steamed vegetables and left over salted cod dish with onion and a little chilli oil.

Late night at Vampire Stories launch at Slide on Oxford street. 1 glass of dry wine - bad move.

Day 26 almond and plum crumble

Almond and plum crumble
5 ripe plums halved
Grated fresh Ginger
Handful of sultanas
2 cinnamon sticks - take out after fruit is stewed
and placed in a pot on the stove
80 grams of butter
1 cup of ground almonds
Rub the almonds and butter together until thick
And crumbly
Pour stew into a heatproof dish
Spread almonds and butter mix on top
10 min under a medium grill heat and it's all done
Served with homemade SCD yoghurt
Yum!
Snacks:
Ripe bananas
2 ripe plums
Salad salmon
Cheddar cheese ham and cheese snacks
Chicken leg
Dinner
Salted cod fried with chilli oil spanish onion and lemon juice from 1/2 a lemon
Steamed broccoli, beetroot, pumpkin and asparagus





Mr Marvel and I give this a 10/10

Day 23 weekend

Today was spent enjoying the fruits of yesterday's labour. An almond Cookie and beetroot juice for breakfast and off to a yoga session. On the way I picked up a brilliant juicer and a donut machine from my neighbours garage sale for $25. Thought the juicer would be great for my mum and my sister would enjoy the doughnut machine as she has a baby on the way and may enjoy some entertaining.
I'm very excited that I got the thermometer working and now have my first pot of thick and creamy SCD home made yoghurt. Tomorrow I will enjoy a banana and yoghurt breakfast.
Off to do some work before the working week...
The trick to yoghurt is a thermometer, good commercial yoghurt and a yoghurt machine.

Blueberry muffins

Blueberry dairy and wheat free muffins
Prep time 10 min
2 cups of ground almonds
1 punnet of blue berries
1 cup of organic sultanas
1 egg
Mulch from left over of carrot and apple juice to make two cups or alternately grate the equivalent from carrots and an apple
Mix together and load into the Pattie cupcake baker
And voilà delicious muffins
Mr marvel rated these 8/10 and princess rated them exceptionally delicious.

Day 22

Dinner-beetroot salad, carrot and soaked Lima bean with parsley sAlad and a wok special.
Wok special
4 sprigs of shallots
1 can of tomatoes
2 cups Organic green string beans (used my new string bean tool)
1 organic zucchini peeled and cut finely
A nice piece of organic Ginger
Cut finely
Seasoned with Olive oil, cracked black pepper, salt
Handful of basil
Mr marvel, princess and i loved it.

Day 21

Home baked almond biscuits
5 cups of almonds
3 tablespoons of honey
Cinnamon
1 organic egg white
100 grams butter
Ground almonds in the blender
Mix in egg white, honey and cinnamon adding butter till the mixture becomes like cookie mix.
Bake in medium oven for 15min - all markings from my convection oven are missing so it's a bit of an estimate.

Mr Marvel suprised me with a 100 percent natural sorbet. Absolutely delicious !
He had cut the ripe organic bananas and frozen them and used a bag of frozen berries and blended it in the blender. Very sweet and delicious

Day 22 weekend

Hot yoga was a great way to start the day. The strength in breath and the pose really made me feel strong. Last night I had terrible cramps after eating the rolls of fruit at 11pm. I'm back on the no food regime after 9pm.
Breakfast was water and a nudie juice.
Lunch is last night's left over soup and salads.
I felt determined to try the yoghurt again and purchased a thermometer. But it doesn't work!

Day 21

Goji berries gave me lots of gas.
But on a happy note Friday night in my kitchen.
Making homemade make up from beetroot.
Dinner
Organic Pumpkin soup with a sprinkle of cinnamon, ginger, 1/4 raw spanish onion, salt, Parmesan cheese, olive oil.
Raw Organic beetroot salad and my famous carrot salad and salmon grilled with home made egg mayonaisse.

Today was totally busy and a really late night. Breakfast was a ripe banana. Lunch was a salad and same with dinner. Lots of nuts and fruit for snacks. Fresh Dates are great sweetied.

A great working day but I was a bit tired/weary from yoga last night.

Day 16 Sunday

After learning more about the wonders of raw foods I went to the organic supermarket and picked up some great specials.
2 mangoes for 1.79, apples and pears the same price as at coles etc. Some images of my fridge.
Beetroot chips are 2.49. Btw my mum and mr marvel loved the raw beetroot salad. Picked up some nice ripe bananas great to make SCD pancake with.
I also picked up some multi vitamins I might also double check with Elaine's book for the best ones I need.
I baked some more delicious muffins in my miracle cup cake machine. Ingrediants pulp from my apple and carrot juicer, home made ground almonds, canola oil, boiled sultanas and all in the muffin tray. I'm not bothering with bi carb any more.forgot to mention Mr Marvel cooked blue eye cod to perfection at lunch time - just a grill, drizzle of olive oil and organic sea salt and pepper.

Yoghurt making .... Argh a disaster. I made curd and whey. Didn't look like anything from any website. I made these little delights that Princess said were delicious and Mr Marvel thought so too. 2 eggs, almond meal, olive oil, Parmesan, mulch from carrot and apple juice, whey and curd, a little salt, baking soda and my little magic machine.
Now put that in your cooking good looking.

Day 11

The 3 ingrediant special
I had jelly for breakfast
Last night I hacked into a fresh coconut and poured the coconut water into a bowl then scooped the coconut flesh and added an overripe mango.
After blending with my hand held blender. I dissolved half the gelatine satchet into a glass of water and added it to the thickish mixture. This morning it's set to perfection. I've taken it out of the glassware to serve. No need for honey as it's sweet.

Pumpkin Soup - cooked in 2o min on the stove
1/2 a Butternut pumpkin cleaned peeled and boiled with 2 cups of water
Parsley
A little Parmesan
Rock salt and cracked pepper
All mixed with my electric hand held blender

Day 10 dinner

Mr Marvel read my blog and whilst I was working with my interns he purchased organic lamb and 5 AUD of beetroot. When I arrived home he had prepared a deep red tray of roast beetroot. It was delicious.

Day 8 cont'd

Day 8 was a delicious salmon salad for lunch
grapes for and bush pepper cheese for dessert
and off the rails for dinner when I ate Thai
food. I had chicken satay sticks, some tom yum soup
and green curry.
I hate to think the amount of sugar in these foods.
But I have another strategy around that. Thai
cooking can be very fresh I will ask for a cashew and vegetable
dish next time and request no sugar.
(this is the reason I avoided posting yesterday)
I felt fine in the morning but it does unravel
good work I'm doing with the diet. Best to stay
strict.

Day 8

I have got through week 1 of the SCD diet and I'm delighted by this.
I will make fresh carrot and apple juice in my juicer as a celebration.
Last night I purchased a yoghurt machine but was disappointed when I realised it needed a thermometer and I read Elaine's book and thought it was all a bit too tricky. So I will check out some YouTube videos from the SCD site before wasting any ingrediants.

Breakfast was fruit juice
A big sashimi lunch and with grapes for dessert
Dinner was grilled tuna with lemon juice and a greek salad but I didn't eat the fetta.
I prepared the SCD carrot cake from Elaine's book.
My friends couldn't believe it was yeast, wheat, dairy, flour free.
I purchased this crazy cupcake machine and the cupcakes were perfectly cooked after 10 min.

Day 6 Dinner and Snack Time

I attended an event tonight and they had some proscuitto and cheese rolls with fresh herbs. This was pretty much the only thing I could eat but it was very tasty.
I stopped past my home on my way to my mother's house and picked up half a boiled egg to snack on and some of the date and hazelnut special for mum to try. She was very impressed and had baked chicken fillets and pumpkin for dinner.

Day 6 lunch

After a great meeting with a couple of very talented Australian fashion designers Ginger and Smart I went to Toko restaurant on Oxford street for lunch. I had sashimi and wasabi plus a seared salmon salad with no soy dressing. I asked for a little oil and vinegar otherwise it was just too dry.

Day 5

Lunch was leftovers from last night's dinner and some fresh figs. Having my office based in The Rocks I am surrounded by delicious restaurants and pastries. Whilst having a meeting at the French Patisserie I oggled at the cakes but then thought of the benefits to my health if I lost interest. It worked and I ate some home made biscuits back at the office.
Mr Marvel made a delicious SCD meal when I got home of boiled organic beetroot, carrots and zucchini and lamb steaks.

I got stuck into the kitchen a made a real strawberry jelly fro
strawberries, legal gelatin and a little honey. I also baked a strange peaked biscuit which mr marvel gave a 5/10 for tastiness.
Ingrediants include coconut, parsely, grated cheese, a little olive oil,
and almond meal.
I also made a dessert styled snack to keep for work.
Using medjool fresh dates and hazelnut meal.
The dates were mixed into a fine paste and hazelnut added.
Mr Marvel couldn't believe it was only 2 ingrediants.
Very tasty.
I also prepared a Mauritian specialty for a snack. Namely
a boiled egg with the yellow scooped out and mixed with
parsley and cheese and put back into the boiled eggs.
I had terrible stomach pains and bloating all night. I think this is from eating meat late at night. I'll try not to that again and see what happens.

Day 4 Snacks

3 Medjool fresh dates from California - bit on the expensive side but delicious.
3 fresh Organic figs - also a bit expensive but very fulfilling.

Day 4 Dinner

A bit frustrated that I had burnt the peanut biscuits earlier in the day as well as spilt oil down my fabulous dress whilst I was preparing it. Mr Marvel kindly prepared a SCD dinner whilst I was at an architectural exhibition. It was very tasty. We had the jelly I had prepared on Saturday for dessert. He gave the jelly a 5/10 and said it was too firm. As you may have noticed, I never use metric measurements for cooking. So I will add more water to the mix next time. Thinking I will make a strawberry jelly tonight from the organic strawberries Miss Delight purchased on the weekend. (I'm really looking forward to making home made yoghurt in a few days.)

Day 4 week day - lunch

Another fast meal is omellete. Whilst eating I checked out crohnboy.com a great attitude and with some good words of caution.
This omellete was
Blue cheese, 3 eggs seperated, parsely, mushroom,spring onion, block cheese - cooked to perfection.

Day 4 - week day

Feeling great this morning and Determined to prepare breakfast in under 10 min..
Hack into a coconut for coconut water.
Chop some strawberries throw in a couple of grapes, small squeeze of honey and cinnamon and onto the stove in a little water, lid on and at the same time roasting some cashews.. Quicker than Tweetie can say "I thought I saw a pussy cat" it's all cooked. I take a sip off the coconut water and add the very light syrup into the coconut water.. Delicious!
The blog took longer to prepare.
I did consult BTVC before roasting any pumpkin seeds and it's says illegal so I didnt use them and now I know.
